Baked Taro Chips

olive oil
1 medium taro root
ground black pepper

1. Preheat oven to 400º and arrange the racks to divide the oven into thirds. Using a pastry brush, coat 2 baking sheets with a thin layer of olive oil and set aside.
2. Peel the taro root and slice it into very thin rounds (about 1/16″ thick). Place the slices in a single layer on the baking sheets and brush the top of each slice with a thin layer of olive oil. Season with salt and pepper.
3. Bake for 12 min. Rotate the pans between racks and bake for about 3 min longer, until the edges of the chips curl up slightly and are just starting to turn golden brown.
4. Place the sheets on wire racks to cool and immediately season the chips with salt. Let chips cool until crisp.
