Cauliflower Broc ‘N Cheese

½ tsp salt
½ head cauliflower, cut into florets
½ head broccoli, cut into florets
vegetable oil spray
1 cup heavy cream
2 oz cream cheese, cubed
1½ tsp Dijon mustard
2 cups shredded Sharp Cheddar
¼ tsp ground black pepper
1/8 tsp garlic powder

1. Preheat oven to 375º. Bring a large pot of water to boil. Spray an 8×8″ baking dish with vegetable oil spray.
2. Cook the cauliflower and broccoli in the boiling water for 5 min, until crisp-tender. Drain well and pat dry with paper towels, then transfer to the baking dish and set aside.
3. In a small saucepan, bring the heavy cream to a simmer and whisk in the cream cheese and mustard until smooth. Stir in the salt, pepper, garlic, and 1½ cups of the Cheddar and whisk for 1-2 min, just until the cheese melts.
4. Remove from heat, pour sauce over the cauliflower and broccoli, and stir to combine. Top with the remaining Cheddar and bake for about 15 min, until browned and bubbly. Serve hot.
