Dandelions with Lemon & Garlic
1½ lbs dandelion greens
2 tbsp olive oil
6 cloves garlic, chopped
2 tsp salt
¾ tsp ground black pepper
1. In a large pot, add the olive oil and garlic and sauté over medium heat for about 1 min. The garlic should not yet be browned.
2. Add the dandelion greens, salt, and pepper to the pot and toss it with the garlic and oil using tongs or a large spoon. Cover the pot and cook for 2 min.
3. Uncover the pot, turn the heat to high, and cook the greens for another minute until fully wilted, stirring frequently.
4. Remove from heat and serve, topping with a pinch of salt and a sprinkle of lemon juice.
Serve hot, either alone or over your favorite pasta.
