Tomato & Basil Pasta
1¼ cups fettucine, or other pasta
2 tbsp olive oil
3 cloves garlic, minced
4 cups cherry tomatoes, halved
½ tsp salt
1 cup fresh basil leaves, torn
¼ tsp ground black pepper
½ cup Parmesan cheese
1. Cook pasta according to package directions. Drain water, and place pasta in a large bowl.
2. While pasta is cooking, heat oil in a medium saucepan over medium heat. Add garlic to pan and cook for 1 min, stirring frequently.
3. Add tomatoes and salt, cover, and cook for 4 min. Remove from heat and stir in basil and pepper.
4. Add tomato mixture to pasta and toss well to combine. Top with cheese.
Pair with grilled chicken or enjoy as a main dish, either by itself or with crusty garlic bread.
